Turkey Herb Baste
1/4 t. dry mustard
1/4 t nutmeg
1/4 t allspice
2 t dried parsley
1 t sage
1 t fennel seed
1 t salt (optional)
1 t pepper
1/2 C dry white wine, e.g., Chablis
2 T lemon juice
With a mortar and pestle grind
together all the herbs and spices. Add the wine
and lemon juice and blend together. Before baking,
brush the inside and rub the outside of the turkey
with the mixture. Stuff with your favorite
dressing. Use remaining mixture to baste the
turkey as it cooks.
