Classic
Vinaigrette Sauce
2 T Dijon mustard
1crushed garlic clove
1/4 C wine vinegar
3/4 C olive oil
salt and pepper to taste
With a whisk,
combine the mustard, garlic, and vinegar in a
mixing bowl. Add oil slowly, whisking all the
while. Salt and pepper to taste.
Note: This
classic French recipe can be varied a hundred
ways. If you are using an herbal vinegar, you can
leave out the garlic which would overpower the
herb flavors. For a summertime taste treat add 3
tablespoons of a finely chopped fresh herb such as
chives, thyme or dill. For fruit salads, use
orange or
lemon juice
instead of the vinegar (and please leave out the
garlic).
